Can we skip right to the cocktail parties this holiday season? Not because I really need a drink, but because these little olive snacks go exceptionally well with mixed drinks. Cheese crackers are delicious on their own, but wrap the dough around a pimento-stuffed olive and you get something perfect for your next happy hour.
When I was working for America’s Test Kitchen I came across a recipe for these while researching the America’s Best Lost Recipes cookbook. We made up a batch and all agreed that they were the perfect accompaniment for a dry (or dirty) martini. As far as I know, the recipe never made it to print, and I don’t think I ever had the recipe. However, they are nothing more than a good cheese cracker recipe wrapped around a jarred olive. After playing around with a few different versions of a cheese cracker, I created this extra sharp and slightly garlicky version that pairs perfectly with a pre-dinner cocktail or beer. Of course, they are just as tasty without a high-test drink, and some adventurous children might even like them.
Making these little morsels is easy but slightly time consuming. Once your butter and cheese come to room temp, you can whip the dough up in minutes. Now, rolling the olives is another story; you might want to pull up a chair for that task.
